Many customers inquire about the best practice to keep their Kramer sharp. Because of the numerous options out there we are now offering my favorite products through our shop (scroll below).

For ideal maintenance use the Ceramic Sharpening Hone on a regular basis to keep your knife razor sharp for many months.

When the Ceramic Sharpening Hone no longer brings the edge back to the level of sharpness you desire, it is time to use a Japanese Water Stone or have your knife professionally sharpened.

Over time your Ceramic Sharpening Hone will build up metallic particles which need to be cleaned off from time to time. Simply scrub the surface of the sharpening hone with this fibrous eraser block to remove the metal.

Japanese Water stones can be simple to work with and if used properly, they will provide excellent control to obtain a razor sharp edge. For more details on how to use and care for water stones, please visit our Sharpening page.

The basic concept in choosing stones is to start with a low grit number, working up to the highest grit number for the finest edge possible. If you want only one stone, I'd recommend getting the 1000/6000 combination stone.

The Gold Stone is used to keep your water stone clean and cutting easily. After using the water stone and while it is still wet scrub it with the Gold Stone to create a slurry on the surface which aids in the final sharpening and most importantly the polishing of your blade.

The Flattening Stone is used to keep your water stone flat. As you use your stones, they tend to wear more in the center causing a dish-effect which needs to be corrected from time to time. Simply wet the stone and rub the Flattening stone until the water stone is flat.
